This is one of our recent additions to our lunch menu plan. It’s delicious and we look forward to it every week.

6 oz. can tuna
1 rib celery, diced 1/2 carrot, grated
1 slice onion, chopped
1/3 cup yogurt
1 TBSP mayonnaise
2 TBSP pickle relish
2 tsp lemon juice
1 tsp mustard
1 flour tortilla

To make one Charley:

1 flour tortilla

2-3 TBSP grated cheddar cheese

Put ingredients on top of tortilla and bake at 325 for about 10 minutes.

    Hi Kimberly,

This may be obvious to others, but I have to ask: 1 flour tortilla is mentioned at the bottom of the tuna topping ingredients. Is that the same tortilla that is used under the next part(how to put a charley together)?

Yes, I was wondering the same thing, (how to put it together?)

You mix up the topping ingredients and then stack the “one Charley” list in the order given and bake as directed.

    Does that make sense?

Is the flour tortilla folded over after the ingredients are placed, or another tortilla put on top, or is it “open face”? Thanks!

    It’s served open faced. 🙂

Delicious! We loved these for lunch this week and I’m so happy to now have a regular menu plan (based on yours) all printed out and tidy on my fridge. Yay for organizing!
