Pumpkin Crunch: 4 Moms Share Thanksgiving Tips

Pumpkin Crunch Recipe

Ingredients:

  • 15 oz pumpkin
  • 12 oz evaporated milk
  • 3 eggs
  • 1 1/2 c. sugar
  • 1 tsp. cinnamon
  • 1/2 tsp salt
  • 1 box yellow cake mix
  • 1 c. melted butter

Combine pumpkin, milk, eggs, sugar, cinnamon and salt.  Pour into greased 9×13.  Sprinkle dry cake mix over pumpkin mixture.  Top with pecans and drizzle with butter.

Bake at 350 for 50-55 minutes or until golden brown.  Serve chilled.

    This is my favorite time of year, and Thanksgiving is my favorite holiday. And pumpkin is my fav. . . well, you get the idea!

    Mmmmm…. this looks wonderful. I’m in the middle of cleaning out my pantry/freezer/everything in preparation for moving (across country!!!) and I think I could even make this without having to buy anything. That’s the key 🙂

    Hope you don’t mind that I have posted twice, once on planning the menu and once for recipes. I hope to post later (if the two year old cooperates–ALL the older children will be gone shortly for the day) about resources that we love for Thanksgiving.
