Chocolate Chip Brownie Cheesecake

This has been one of our favorite birthday desserts for many years. Cheesecake and brownies, how can you go wrong?

Chocolate Chip Brownie Cheesecake

Ingredients:

1 (19.8 oz) package fudge brownie mix (or scrumptious homemade brownies)
3 (8oz) packages cream cheese, softened
1 (14oz) sweetened condensed milk
2 eggs
2 tsp vanilla extract
1/2 cup chocolate chips

Directions:

Preheat the oven to 350 and grease the bottom of a 9″spring form pan.  Prepare brownie mix according to package directions (or make homemade brownies) and spread evenly into prepared pan.  Bake at 350 for 35 minutes or until set.

Beat cream cheese until fluffy.  Gradually beat in condensed milk.  Add egg and vanilla extract and mix well.

When brownies are finished, mix chocolate chips into cheese mixture.  Then pour the mixture into the prepared pan.  Reduce heat to 300 and bake for 50 minutes.  Cool.

    Ooooh…. I’ve never tried making a baked cheesecake before (the no-bake, gelatine kind are by far more popular here in Australia) but this recipe might have just inspired me to attempt it! It sounds so good…

    Kimberly, I picked up Ancient Civilizations and the Bible by Diana Waring from my husband’s office yesterday. It’s nice that AiG and other homeschooling companies send him curriculum, etc. I can shop from his desk and bookshelves. Anyway, is this what you are considering for next year? Looking through it for about 30 minutes, I can say that I really like how it is divided. Four weeks for each unit which will cover a whole year through AD 29. Each week focuses on a different learning style so all your students are covered. There is a large student workbook/textbook that includes lots of hands-on learning, recipes, lists of great books to read, etc. There is also a smaller workbook for children K-4. It is very KONOS-y with crafts, science activities and fun songs, etc. The only drawback is that it is NOT reproducible which is a shame as there are very few pages (coloring pages, word searches, maps) that each child would need. I am excited about it because I will have something from the same publisher that I will be able to use for my elementary-high school students. I even think my 12 yo would be able to lead the little guys in some of the activities which will be good training for her. There are also CDs to listen to which I didn’t find in his office so I may need to purchase those. All in all at first look I am liking it much better than the science programs. Oh, there is also a test kit which will be good for my high schooler who is looking toward a college degree. Let me know if you have any questions.
